December 2021 Happenings

Big Snowstorm Drama!

I had a very frightening commute to work one snowy day in December, so Jac bought me snow tires. So sweet! With another big storm looming, I went over to Jac’s to get them installed…and then got snowed in that very night and had to spend the night at Jac’s house (after trying
to get home to no avail).  Luckily the next day was a Snow Day for school, and
that was a good thing because it snowed so much that a tree fell across
the driveway and had to be cut and hauled away before we could even get out.

After all that drama, I bought Jac some snow tires for his car as well:

Our First Christmas

Giving at Christmas Time
We visited the Smith’s Angel Tree and adopted a kid for
Christmas—hopefully starting a tradition for us.  We picked out an
11-year-old boy named Daniel, and bought most of the things on his list.
🙂

Shoe Twins!

Compliment
Jac enough on his shoes and he will buy you a pair!  🙂 Just in time
to wear on our road trip to New Mexico!!

Banana Bread Bonanza

Jac baked loaves and loaves
and loaves of banana bread–for my
parents, Cindy & Jerry, my neighbors (for plowing the snow),
and Jac’s neighbors. So yummy!  And, just to be safe, he kept an
“emergency stash” as well.  🙂

Spectacular Christmas light displays
We checked out some fancy Christmas trees one weekend (Draper and Taylorsville).

Christmas Eve at Cindy’s house
Jac made a bunch of fun, delicious appetizers…which were of course a big hit!

Winter Adventure
On Christmas Day we headed out for a big week-long adventure to New Mexico, with lots of stops along the way.  Click here to read about it.

“Slow Sundays”
Besides snowstorms, Christmas festivities, and road trips, we spent most of our time together in December just hanging out, puttering, computering, getting to know each other, and lots and lots of cooking.

Here’s Jac making a pizza:

On one slow Sunday, I had lost my voice (again!), and was just working on my computer while Jac cooked. At one point:

Jac: What would you like for lunch?
Betsy: Something simple, like a bagel and hummus.
Jac: Okay.

I returned to her project and Jac gots to work on a simple lunch.  Fifteen
minutes later, Jac presents me with this “simple” lunch (complete with the
little flosser that he knows I use after eating. So thoughtful.):

On another Slow Sunday we drove up snowy Big Cottonwood Canyon:

…then we checked out an adorable little boutique grocery store–Liberty Heights Fresh–and picked out a few new, curious food items (new to me at least) for our first “New Food Challenge”:

Food items in this week’s challenge:
  • romanesco (mix of broccoli and cauliflower)
  • celery root
  • a mix of heirloom tomatoes
  • (+ fresh fettuccine and fresh bread to go with them)

Master
Jac’s final creation:  Fettucine with heirloom tomatoes, mushrooms,
celery root, and romanesco. With some garlic bread.  Yuuuum!
