November 2021 Happenings
Dr. Jac to the Rescue
I got the covid booster, so Jac arranged to “work from home” so
that he could be there to help! What a sweetie! And since I didn’t
feel sick at all, Jac came over and fixed my bathroom sink and hang my curtains. What a guy!
West Desert Ramble “Scenic” Drive
Still getting to know each other, we decided to take a long “scenic”
drive to explore the area west of Toelle…and get
in lots of talking time in as well. In the end, the drive was not so
scenic, but the conversation was fun.
Afterward,Jac surprised me with my favorite meal from my time spent in Spain (which I mentioned offhand a few days before) — gyros! YUM!!!
Korean Food and Candles
One Saturday in November, we spent all day together on super fun date. We started with lunch at Koko Lunchbox, a small Korean restaurant in Provo. It was highly rated on Yelp, and we thought it was fairly good.
Then we learned how to make our own scented candles at The Wick Lab in Provo.

Then… omelets for dinner (at my house) and hanging out. Fun day!
Thanksgiving with my family
Jac cooked a number of unforgettable dishes for Thanksgiving with my family. He made a delicious turkey, rich gravy, amazing acorn
squash (my favorite!), a stunning fruit tray, cute little tuxedo
strawberries, and yummy Veracruz pinwheels. It was a delicious meal AND
Jac’s first time meeting my family. 🙂
Our First Trip Together
Despite only knowing each other for one month, we went away together on a trip to Dinosaur National Monument. How crazy! Click here to read about it.
And There Was Eating — Lots of It!
In addition to the above activities, we got together often and slowly got to know each other over good food and good conversations. Among the yummy foods Jac cooked…
Kebabs:
Lamb with Ratatouille:
Wild Mushrooms in a Fouette & Seared Tuna:
