January 2022 Happenings
Look out! We’re gonna dehydrate EVERYTHING!
In January, we bought a dehydrator to get more fruits and vegetables in our diets AND a grain mill so Jac can make some pastas and breads and other goodies out of healthier things than refined white flour (ie: chickpeas, lentils, jasmine rice…). Once they arrived, we got right to business.
“Betsy’s Bathroom”
Jac went shopping and tricked out his spare bathroom as “Betsy’s bathroom,” complete with a bunch of things I need/like for sleepover nights. SUCH A SWEETIE!!
Fix It Jac
We spent one Saturday in January fixing a leak in my basement
(Hero Jac!!!!) Another day, Jac fixed my bedroom fan that had
been broken for YEARS. And most amazing of all, Jac fixed my parents oven–something they’ve been trying to fix for YEARS and had several professional repair people fail at! So dang impressive. Basically Jac is blowing my socks off at
this point!!!!
To Tow or Not to Tow–That Was the Question
We also spent A LOT of the month debating whether to get a trailer. One Saturday, while Amelia was getting all
dolled up at the Toyota dealership (a recall), we went “shopping” for
her new buddy — a trailer! We looked at pop-ups, teardrops, and
A-frames…and in the process we made some new discoveries, ruled things
out, and did some good thinking on the subject. But the verdict is
still out on whether this will be us some day soon:
Mid-Week Adventure: Devil’s Slide
Since we were both off on the same weekday, we made a quick trip to Weber Canyon see an odd geological feature called the Devil’s Slide
— which is two parallel limestone layers that have been tilted to
nearly vertical! The two layers stick out 40 feet from the mountainside
and are about 8 feet apart. So interesting and unique.
Devil’s Slide is just outside the mostly cute little town of Morgan, so
we spent some time crusing around there, and then headed back to Layton
for dinner at an English restaurant. We got Shepherd’s Pie (okay), fish
and chips (pretty good), and spotted dick for desert (bleh!):
Weekend Getaway to Capitol Reef
One weekend we went on a quick, last minute trip to Capitol Reef National Park. To read about it, click here.
And of course…More Chef Jac
One weekday in January, Jac had a little surprise up his sleeve. He was supposed to be at my house for the evening at 6pm, but he was late. “Wonder where he is?”
20 minutes later…
Jac to me via text: Hello.
What? Confused, I decides to check outside…
SURPRISE!
Jac is having an impromptu winter barbecue on my back porch, with a
little barbecue he brought with him, So hilarious and fun and
spontaneous and unexpected… what a memorable surprise!

…that just needed a little garlic butter spread and cheese.
And, of course, there were other delicious meals to be had in January, like this absolutely delectable dish (left) and these dessert masterpieces (one of which we delivered to my parents):
We also launched our new plan — Jac cooks the food and I
pay for it. Week one: these fancy salads I get to take to work each day. YUM!
Last Random January Activity
On one chill, puttering-around-the-house Sunday, we made a quick trip to Salt Lake’s Gigal Scuplture Gardens to see the
odd, uber-religious sculptures created by a clearly passionate and
religious man. Kinda interesting, mostly just weird.
